It’s because the ufc is just like every other 3 letter sport league.
MMA is not sport, mma fighters are more like gladiators than sportsmen There are concrete rules in boxing and this is why boxing is a sport, these rules make sportsmanship between two boxers MMA is just fighting for entertainment, mma fighter can't be an elite sportsman because he needs to be a wrestler and a striker(legs fists knees and elbows) at the same time and his level in these skills will be average (sorry for my english)
This is the real reason boxers don't transition to mma. Why would they when they would be earning significantly less.
The simple fact of the matter is that the UFC is doing well and expanding. Boxing is dying. Maybe boxings' pay structure isn't what its cracked up to be.

But other big leagues with similar negotiating power/monopoly like the NFL, NBA, MLB etc pay their athletes a far greater percentage of revenues than the UFC. There has to be an additional reason that the leagues I just mentioned pay their athletes a larger share of revenue while the UFC does not.

I think you cannot answer this question fairly without including the "average" pro fighter in your analysis.
Boxers are independent contractors while UFC fighters are gig workers. Dana White has engineered his sport to funnel most of the revenue to him including the gear the fighters must wear. That the UFC pays their fighters so little is the consequence of Dana White owning the show and everyone that works for him.
